Set back from the highway between Merimbula and Pambula, the cherished molluscs can be slurped casually from the takeaway or enjoyed with inventive garnishes (avruga caviar, wasabi aioli) in the restaurant. Beyond house-smoked fish linguini and seafood laksa, nonpescatarians can feast on tremendous steaks and slick vegetarian dishes. Tours of the oyster farm depart 11am Tuesday to Saturday ($22, 45 minutes).

There are several vegetarian options, as varied as eggplant linguini and a vegan poke bowl, plus there's a kids' menu with nary a slimy bivalve in sight.
