Whimsical Minibar is a two-Michelin-starred foodie nirvana, where 12 lucky people get wowed by animal bits spun into cotton candy and cocktails frothed into clouds. The tasting menu, determined by chef José Andrés, is delicious and never dull. There’s a sense of madcap experimentation among the 20-plus courses, as you’d expect from a molecular gastronomist. Reservations are tough to get.

Bookings become available the first Monday of the month for the following 60 days. If you don't score a reservation, or if you're looking to sample Andrés' famous food but in more casual environs, try his other local restaurants such as Jaleo and Zaytinya.
