Bamboo says it's the world's first 'certified sustainable' sushi restaurant. Ecofood twist aside, it's hard to find fish that tastes this good – try it in 'flights' of whatever's in season. And don't forget the cooked dishes, like miso-marinated Oregon-coast cod. If you can't sit at the sushi bar – the primo spot – sit at the cocktail bar, where the craftsmanship is equally impressive.
