Deadshot

Portland

Once a Mondays-only pop-up bar inside the restaurant Holdfast, Deadshot found a home when bartender Adam Robinson and Holdfast's chefs pulled together for a shared bricks-and-mortar space. The bar has a 'cocktail lab' – with a centrifuge. Drinks aren't cheap ($10 to $14), but where else will you find bitter melon, sesame or cabbage in your cocktail? This place is serious.
