Opened by long-adored Portland chef Vitaly Paley, the Imperial – attached to Hotel Lucia – is huge in scale but fastidious and detail-oriented in approach. The kitchen is built around a massive wood-fire grill and rotisserie, and the menu exploits seasonal Northwest bounty – from rib eye and roasted chicken to grilled asparagus and ember-roasted potatoes. Great happy hour, too.
