Upmarket, contemporary dining, with modern tweaks to Turkish classics and a fun approach to dish presentation, is the name of the game here. Order the Erciyes kebap (a mountain-shaped mound of chips, grilled beef and peppers smothered in a rich sauce) or the Castle chicken – balsamic-sauce-drenched chicken served under a lavaş (flatbread) castle-hat, a tribute to Ortahisar's castle.
Full marks for its good vegetarian mains, a pasta selection and excellent meze-style plates for when you just want a light lunch. Dine on the outdoor terraces in summer or inside the cosy lounge-bar. There's a cave dining room below for colder months.
