Celebrated Amsterdam chef Ron Blaauw is one of the gastronomic heavyweights behind this Michelin-starred restaurant in a historical setting on Amsterdam's oldest canal. Seafood is the speciality, with starters such as oysters topped with jenever-poached crab, and mains including salt-crusted sea bass with cockle and saffron bisque. Wine pairings are excellent.
It's housed in the Sofitel Legend Grand hotel, which was originally a 15th-century convent, then the Dutch Admiralty and later the city hall where Queen Beatrix married in 1966.
