Inside the Club Hotel, this is one of Jersey's two Michelin-starred restaurants. Hotshot chef Steve Smith presides over an ever-changing seasonal menu that uses local ingredients, such as scallops, oysters and Jersey Royal potatoes to maximum effect. Expect subtle lighting, smooth service, a wine-glass chandelier and such dishes as oyster cassonade with gossamer-light cucumber foam and veal textures with morels.
