Naturally coloured by dark-blue butterfly pea blossoms, and known as anchan in Thai, these bowls of noodle soup are otherwise similar to the typical gŏo·ay đĕe·o you’ll find throughout the country. And along with the blue noodles you can also get a yummy blue-hued latte.
