The quintessential St-Barth experience since 1984, Maya's shabby-chic waterfront restaurant is a celebrity magnet. The kitchen creates a small but daily changing, market-inspired menu that might include ginger-marinated shrimp, filet mignon with béarnaise sauce, blackened dorade with a micro-herb salad or langoustine gratin. Only Maya’s desserts never change: try their world-famous coconut tart. Book well in advance.

Its takeaway deli, Maya's to Go, is opposite the airport.
