Back in the 1970s, a German couple began importing salmon to feed Lanzarote's expats. Today, salmon is delivered from Scotland or Norway, then smoked in artisanal ovens with salt from Lanzarote's Salinas de Janubio at this family-owned ahumadería 2km east of Yaiza.
