Bodega 1900 mimics an old-school tapas and vermouth bar, but don't be fooled: this venture from respected chef Albert Adrià unveils gastronomic tapas such as 'spherified' reconstructed olives, or its mollete de calamars – probably the best squid sandwich in the world, hot from the pan and served with chipotle mayonnaise, kimchi and lemon zest.
