Juan José Cuevas is the Puerto Rican, Michelin-starred executive chef at the Condado Vanderbilt fine-dining flagship restaurant. He champions local farmers and spent months sourcing the island’s finest ingredients for dishes such as tuna-hiramasa crudo with local radish, lobster and salami risotto and his specialty cochinillo, or pig cheek.
