A subtle designer entrance reveals just a handful of tables at jerezano chef Israel Ramos' intimate, highly innovative, Cádiz-rooted Michelin-starred restaurant Mantúa, where eight-, 12- or 16-course tasting menus are paired with some of 200 Jerez wines. Ramos is known for highlighting top-quality ingredients, without too much fuss, and also runs more informal nearby tapas spot Albalá.
