On the city's busiest central square, seven 18th-century buildings have been combined into an enchanting labyrinth incorporating part-cave meeting rooms with stone walls, light-touch modern lounges and inner courtyards. Each of the 28 luxurious rooms is different, with details including fireplaces, beams or timber ceilings.
One of its two restaurants, La Cristallerie, has a Michelin star; the other is a rotisserie. There's also an elegant cafe.
