Jimbōchō, a neighbourhood known for its universities, now has a school for students of craft gin. Cocktail Works Jimbōchō carries some 180 bottles of it, of which about 20 are made in Japan (a trend that has just kicked off here).
Signature cocktails include the 'Ki No Bihaku', made with gin from Kyoto boutique distillery Ki No Bi, sanshō (a kind of pepper, similar to Sichuan pepper), amazake (nonalcoholic fermented rice milk) and lemon.
