If you’re just off the Lake Garda ferry from ‘down south’ (ie Lombardy), welcome to Trentino where Teutonic influences prevail and sausages are king. If you’re heading deeper into the Dolomites, treat the speck (smoked cured ham), apple strudel and unfortunately named stinco (pork shank) as a shape of things to come.
