This wooden chalet in the hills immediately above Collesano is one of the Madonie's gems – one whiff of the delicious aromas emanating from the kitchen and you'll know you've come to the right place. The menu features hearty mountain specialities like stewed pork with artichokes and smoked ham, alongside other rustic favourites featuring Slow Food–recognised regional ingredients.

Items not to be missed when available include the degustazione di antipasti (a plate of stuffed zucchini flowers, deep-fried ricotta, lardo-topped bruschetta and chargrilled local onions), pappardelle al sugo di selvaggina (homemade pasta ribbons with a game sauce) and fagiolo Badda Nera (beans grown in the area around Polizzi Generosa). Pizzas are added to the menu at night – a good reason to book into the on-site B&B (singles/doubles €40/60).
