Trieste’s only Michelin-starred restaurant has an enviable setting on lovely Piazza dell’Unità. The menu is modern, executing classic ideas in innovative ways. Try the deceptively simple ricotta gnocchi, which has a cloud-like texture and a three-tomato sauce that makes your taste buds pop. Other crowd pleasers include pigeon foie gras and grilled octopus with lemon potatoes. Advice on wine pairings is excellent.
The fine dining restaurant seats just 12, but there’s a larger, more informal bistro (open 12.30pm to 2pm and 7.30pm to 10pm daily, meals €65 to €90) next door.
