Pontedera-born chef Nicolò Baretti uses only seasonal products, natural ingredients and traditional flavours – to sensational effect.

Imagine roast octopus with celeriac, green apple, spinach and cardamon; or guinea fowl with roast artichokes and marjoram-spiced pistachio cream. The grand finale is dessert, climaxing perhaps with salted-popcorn ice cream with smoked tea crumble and dark chocolate ganache. Culinary heaven on earth.
