Everything here is essentially crudo (raw), with chefs Niccolò Paroli and Emiliano Bini creating a long list of fresh tartare using quality and locally sourced meat and fish. With a dessert menu that includes raw pear and pecorino cheese drizzled in honey (delicious), they offer a unique take on Tuscan cuisine. Lots of veggie options, too.
