There's organic, and then there's certified organic – and this elegant country-style restaurant at Brook Lodge was Ireland's first to be classified as such. Everything is grown on nearby organic farms or foraged from the nearby fields, woods, river and sea. The menu lists the provenance of ingredients used in dishes such as Glenmalure venison with game consommé, or beech-smoked wood pigeon with chestnut terrine.
