Chef Garrett Byrne was awarded a Michelin star for this bold, stylish restaurant in his native Kilkenny. He's passionate about supporting local and artisan producers, and adds a French accent to memorable culinary creations such as black-pudding-stuffed pigs trotters or rhubarb-crumble souffle. The early bird menu (to 9pm Wednesday to Friday, to 6pm Saturday) is a serious bargain.
