Run by renowned chef Sebastien Gravé (who also runs a place in Paris), this is Bayonne's top spot. It's committed to big Basque flavours, but explores them in all kinds of innovative ways. Inside, things are sleek and minimal, with plain wooden tables and pop-art prints on the walls, and there are dreamy river views through the plate-glass windows.
