This chandeliered boutique – one of several in Paris – concentrates on one dessert, the marvellous merveilleux: meringue layered with whipped cream and rolled in one of six seasonal flavours, such as chocolate flakes, speculoos (spiced biscuit) powder, almond slivers, caramel dust or rose sugar crystals. Watch staff hand-making the delicacy while you queue.
