With a busy entertainment program, hearty food, and boot-proof wooden floors, Evolution is a beacon that calls skiers in from the cold. Until 11.30am there's generous English breakfasts, smoked salmon and oaty granolas, lunch service brings burgers from vegetarian to Thai-style fish, while dinner has something for all tastes: five-spice duck, paneer salad and hulking steaks. Kids' menus available.

There's an eclectic live-music program (usually Tuesday, Saturday and Sunday evenings), happy hour is daily at 4pm, and the whole outfit is only a 50m stumble from the Chaudanne ski lift.
