Whether by the shimmering lakefront in summer or in the elegant salon in winter, dining at Père Bise is never less than extraordinary. Double Michelin-star-awarded chef Jean Sulpice prepares local ingredients with visual precision and a light touch: savour chestnut and truffle velouté, calf heart with Savoie beer, and a cloud-like Chartreuse soufflé. Reservations are a must.

Much easier on the wallet are main courses in adjoining Bistro Le 1903, including effortless renditions of wine-braised beef, trout with capers and pot-au-feu (stew); the menus are good value (€36 to €44).
