The volcano views more than make up for the bumpy drive out to this charming, well-run mountain lodge near the northern entrance to Cotopaxi National Park. Pretty, pink-walled buildings with traditional straw-covered roofs are equally appealing on the inside, with wooden beams and woodburning stoves. The restaurant serves up surprisingly sophisticated fare, including a 10-course tasting menu.

Activities on offer include horseback riding, hiking and mountain biking.
