Brainchild of Noma co-founder Claus Meyer and former Noma sous-chef Torsten Vildgaard, Studio bagged its first Michelin star within months of opening. Rooted in Nordic traditions, the open kitchen revels in ingredients and influences from further afield. Whether it's sourdough æbleskiver (Danish pancake puffs) filled with truffle and cheese, or grilled pigeon paired with warm cherries cooked in foraged spices, Studio smashes it.
The restaurant is located in the harbourside Standard, an iconic functionalist building that's also home to Claus Meyer's smørrebrød eatery Almanak.
