Famous for its yángròu pàomó (羊肉泡馍): pay for your dish, take a seat and break your bread into crumbs to await the broth. There are two types of pàomó: one is called gānpào (干泡; dry soak) where the broth is totally soaked up by the bread and the other is shuǐwéichéng (水围城) where there is a large amount of broth. Take your pick.

Both are served with pickled garlic, coriander and a small dish of chilli sauce.
