Ho Lee Fook

Hong Kong

As irreverent as its name suggests, this buzzy underground spot does a winkingly modern take on retro Chinatown cuisine. Fat prawn toasts are served with Kewpie mayo, the char siu (barbecued pork) uses upmarket Kurobuta pork, and prawn lo mein is spangled with crunchy fried garlic and slicked with shellfish oil. It's justifiably popular and the atmosphere is see-and-be-seen, despite nightclub-level darkness.
