Two-Michelin-starred Amber was set to receive a complete physical reinvention at the time of writing, but one thing that won't be changing is Chef Ekkebus or his masterful fusion of traditional French food with modern Asian flavours and ingredients – think Hokkaido sea urchin with lobster jelly and seaweed waffles or duck foie gras with daikon radish fondant.
