Qīngxiāngyuán Lǎozìhào Niúròu Lāmiàn

Top choice in Gansu

Grab a ticket from the kiosk out front of this Muslim restaurant and collect your beef noodles (niúròu miàn; ¥8) from the kitchen window inside. The noodles are excellent, infused with dollops of scarlet-red chilli oil. For extra meat, ask for jiāròu niúròumiàn (加肉牛肉面; ¥15). There's no English sign, but it's the green-and-white place roughly opposite a small branch of ICBC bank.

There's also lamb noodles (羊肉面片, yángròu miànpiàn; ¥15), enough to feed an army; the 'oil splash noodles' (油泼面, yóupō miàn) is another delightful noodle choice. You can also just get servings of beef (¥7) and lamb (¥8).
