Cazador

Top choice in Chiloé

Formerly the excellent and innovative Mar y Canela, the restaurant's same chef, and her wine-savvy new partner, have actually managed to improve this groundbreaking palafito bistro, which now specializes in heartier dishes and game, many of which arrive in cast-iron skillets.

Start with a beautiful queso de campo (country cheese) or the outrageously good smoked ham seared in apple vinegar with chorizo and potatoes, then move on to heartier dishes like duck or goose with red wine, shallots and herbs, smoked pork ribs or the seafood of the day. Reserve ahead – it's small. The space is also home to Castro's best handicrafts shop, Pura Isla.
