One of the island's best dining choices, this superb Michelin-starred restaurant is just off the main plaza. There's a marked leaning towards seafood: try the sumptuous grand menú (from €60 with wine pairing), or go for the Gillardeau No 3 oysters with apple, crayfish in juice and sriracha, or tuna with bordelaise sauce. Advance reservations are absolutely crucial.
