One of our favorite économusées (workshops) to visit on the island, the nougatiers here take egg whites, honey and/or sugar, throw in locally sourced black currants (or maple or cranberries) and, as if by magic produce the chewiest, most delectable nougat in North America. It's great to watch it being made – even better eating it.
