Rustically elegant, the Bison is full of trendy, well-off Calgarians dressed in expensive hiking gear, who're drawn by its regionally sourced, meat-heavy menu. Alberta-raised bison naturally takes center stage, in the form of tataki, short ribs, striploin and ribeye steak – but you'll also find outliers like wild-caught British Columbia steelhead trout or small plates of elk poutine, roasted cauliflower and the like.
