Peppers is one of Launceston’s newest and most ambitious hotels. Filling the city's former silos (together forming Launceston's highest building), it's now stuffed with character instead of grain. Room walls curve with the silos' shape, and you're free to take the hotel dog – Archie the black Labrador – for a walk. Silo-side rooms have views to Seaport and Cataract Gorge.

There's a day spa and the excellent Grain of the Silos (mains $32 to $48) restaurant.
