The pioneer and patriarch of Tasmanian distilleries, Lark has a moody, low-slung cellar door and whisky bar at the water's edge (the actual distillery is in the Coal River Valley, 20 minutes' drive away). Work your way along the whisky wall, and if the weather's right, sit out the back in the whisky garden overlooking Constitution Dock.
Distillery tours ($80), which include tastings from the cask, start at the cellar door before heading out to the good stuff. Tours run at 10.30am and 1.30pm daily except Thursday.
