One of the world's best restaurants, the triple-Michelin-starred Alinea purveys multiple courses of molecular gastronomy. Dishes may emanate from a centrifuge or be pressed into a capsule, à la duck served with a ‘pillow of lavender air.’ There are no reservations; instead Alinea sells tickets two to three months in advance via its website. Chef Grant Achatz gutted and renovated the restaurant in early 2016, so it feels less mod and more classic. Three dining options are available: the salon menu (10 to 14 courses), the gallery menu (16 to 18 courses) and, most exclusive of all, the private kitchen table experience ($390 per person; parties of six only).

Vegetarians and vegans should call in advance to request accommodation. Note that there's no sign on the restaurant's door, so look for the house number.
