This popular place does gŏo·ay jáp yoo·an, identified on the menu as 'Vietnamese noodle'. Introduced to northeastern Thailand via Vietnamese immigrants, the dish combines peppery pork sausage, a quail egg, thin rice noodles and a garnish of crispy fried shallots in a slightly viscous broth. There's no English-language sign here; look for the white-and-green shopfront and scores of local diners.
