Serving authentic Japanese cuisine, Hana is ensconced in the serene courtyard of the Casa Cakchiquel, graced by hanging plants and a gallery of photos of old Pana. Besides preparing such classics as nigiri sushi, sashimi and tempura, Chef Mihoko does uramaki ('inside-out' sushi), donburi and cold udon noodles just as they're done in her native Japan.
