William Ledeuil's third project, Kitchen Ter(re) showcases pasta dishes made from six varieties of ancient grains. But don't write it off as another tired riff on Italian cuisine: instead expect a marvellous procession of out-of-the-box flavour and colour combinations, ranging from citrusy girolette with pumpkin, peanut paste and a fourme d'Ambert cream, or conchiglioni with cockles, green curry and nori-roasted cabbage.
