Raw Jersey milk, organic eggs and fresh fruit, and wild herbs from southern France go into this Provençal ice-cream maker's sublime glaces (ice creams). Some 40 flavours are available each day, such as black sesame, geranium and pistachio, lemon and ginger, saffron, chilli pepper and hazelnut, black truffle, fennel seed, even hibiscus mojito. Expect lengthy queues (well worth the wait).
