Dishes chalked on the blackboard are all made from the fresh produce at Chartres' iron-canopied market, which the bistro overlooks (terrace seats give you front-row views of the action). Offerings change daily but expect the likes of turbot with black lentils and smoked-garlic aioli or raspberry-marinated veal.
