Gemyse pulls vegetables out of the wings and into the spotlight, using seasonal, organic produce from its own plot of land in Krogerup to create herbivorous menus with punch. Although diners have the option of adding meat or fish to their dishes, the vegetable-based, globally influenced creations hold their own, no doubt surprising some stauncher carnivores.

Large windows overlook the restaurant garden, where guests can cook their own dough twists, popcorn and marshmallow on the fire pan. When Tivoli is open, restaurant guests are required to pay the park entry fee to access the restaurant, so it's best to combine a trip to both. When the amusement park is closed, diners can access the restaurant via Hotel Nimb. The kitchen closes at 10pm; book ahead.
