Founded in 1898, the speciality dish at one of Xi'an’s most famous restaurants is steaming bowls of yángròu pàomó. The catch is that the diner is responsible for ripping up the bread before the chefs add the soup. Many other cold and hot dishes are on display, so just point if you don’t speak Chinese.

It’s located on the 5th floor of a large black glass building.
