Hotel restaurants can be hit-and-miss, but the Evergreen inside the Delta Banff Royal Canadian Lodge is consistently good, provided you like formal fine dining and can look past the rather dated decor. The Michelin-trained chef's modus operandi is to combine classic French dishes with Canadian produce to create enticing hybrids, such as elk short-ribs Bourguignonne and elk medallions.
